Crockpot Garlic Butter Beef Bites with Potatoes

Make Crockpot Garlic Butter Beef Bites with Potatoes with clear steps, pantry staples, and flexible swaps.

Ingredients

  • 2 pounds beef stew meat cut into bite-sized pieces
  • 1/2 cup unsalted butter melted
  • 5 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 1 pound baby potatoes halved
  • 1/4 cup fresh parsley chopped (for garnish)

Method

  1. In a large bowl, combine the melted butter, minced garlic, Italian seasoning, paprika, salt, black pepper, and Worcestershire sauce. Mix well to create a marinade.
  2. Add the beef stew meat to the marinade, ensuring all pieces are evenly coated. Let it sit for about 15 minutes to absorb the flavors.
  3. While the beef is marinating, prepare the baby potatoes by washing and halving them. You can leave the skins on for added texture and nutrients.
  4. In the crockpot, layer the halved potatoes at the bottom. Then, add the marinated beef on top of the potatoes.
  5. Pour any remaining marinade over the beef and potatoes to ensure maximum flavor. Cover the crockpot with its lid.
  6. Set your crockpot to low and cook for 6 to 8 hours, or until the beef is tender and easily pulls apart with a fork.
  7. Once cooked, stir gently to combine the beef and potatoes with the sauce. If desired, adjust seasoning to taste.
  8. Serve hot, garnished with freshly chopped parsley for a pop of color and added freshness.
