Preheat your oven to 375°F (190°C).
Pat the chicken breasts dry with paper towels and season both sides with salt, black pepper, and garlic powder.
In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and sear for about 5 minutes on each side until golden brown.
Remove the chicken from the skillet and set aside on a plate. Reduce the heat to medium.
In the same skillet, add the heavy cream and chicken broth, scraping any browned bits from the bottom of the pan. Stir in the Parmesan cheese until well combined.
Return the chicken to the skillet, spooning some of the sauce over each breast.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
Remove from the oven and let rest for 5 minutes. Garnish with fresh parsley before serving.
