Delicious Pear and Gorgonzola Stuffed Chicken Breasts

Pear and Gorgonzola Stuffed Chicken made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 ripe pears diced
  • 4 oz Gorgonzola cheese crumbled
  • 1 cup fresh spinach chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup chicken broth

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the stuffing by mixing pears, Gorgonzola, spinach, olive oil, garlic powder, salt, and pepper in a bowl.
  3. Cut a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.
  4. Stuff each chicken breast with the pear and Gorgonzola mixture, pressing firmly to fit as much stuffing as possible.
  5. Season the outside of each stuffed chicken breast with salt and pepper.
  6. In a skillet, heat olive oil over medium-high heat and sear each chicken breast for 2-3 minutes on each side until golden brown.
  7. Transfer the seared chicken breasts to a baking dish and pour chicken broth around them.
  8. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through (165°F internal temperature).
  9. Let the chicken rest for 5-10 minutes before serving.
