Ingredients
  

  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 can 14.5 oz diced tomatoes with green chilies
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream for serving
  • 2 green onions sliced (for garnish)

Method
 

  1. In a large skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain any excess fat.
  2. Add the diced onion and minced garlic to the skillet. Cook until the onion is translucent, approximately 3-4 minutes.
  3. Stir in the black beans, corn, diced tomatoes, chili powder, cumin, salt, and black pepper. Mix well and let simmer for 5-10 minutes, allowing the flavors to meld.
  4. Preheat the oven to 350°F (175°C).
  5. Spread a thin layer of the beef mixture in the bottom of a 9x13 inch baking dish.
  6. Lay 4 tortillas over the mixture, overlapping slightly.
  7. Spread half of the remaining beef mixture over the tortillas and sprinkle with 1 cup of shredded cheddar cheese.
  8. Layer the remaining tortillas on top, followed by the rest of the beef mixture and top with the remaining cheese.
  9. Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  10. Remove from the oven and let cool for a few minutes before serving. Top each serving with a dollop of sour cream and sliced green onions.
