Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon

  • 1/2 cup vegan butter softened
  • 3/4 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 1/2 cups rolled oats
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup chopped pecans or walnuts
  • 1/2 cup vegan chocolate chips
  • 1/4 cup raisins optional

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt until well combined.
  3. In a large mixing bowl, cream the softened vegan butter with both sugars until fluffy, about 2-3 minutes.
  4. Add the applesauce and vanilla extract to the butter mixture, mixing until fully incorporated.
  5. Gradually stir in the dry ingredients into the wet mixture until just combined.
  6. Fold in the rolled oats, shredded coconut, chopped nuts, chocolate chips, and raisins if using, ensuring an even distribution.
  7. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving enough space between each for spreading.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown but the centers still appear soft.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
