Ingredients
  

  • 1 cup vegan butter softened
  • 1/2 cup powdered sugar plus more for coating
  • 2 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 tsp salt
  • 1 cup finely chopped pecans or walnuts

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened vegan butter and 1/2 cup of powdered sugar until the mixture is light and fluffy.
  3. Add the vanilla extract to the creamed mixture and mix until fully incorporated.
  4. In a separate bowl, whisk together the all-purpose flour and salt. Gradually add this dry mixture to the wet ingredients, mixing until combined.
  5. Fold in the finely chopped pecans or walnuts, ensuring they are evenly distributed throughout the dough.
  6. Scoop tablespoon-sized portions of dough and roll them into smooth balls. Place them on the prepared baking sheet about 1 inch apart.
  7. Bake in the preheated oven for 10 to 12 minutes, or until the edges are lightly golden. The centers should remain soft.
  8. Remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
  9. Once the cookies are completely cool, roll them in additional powdered sugar to coat them generously.
