Delicious Vegan Tikka Masala Recipe for Home Cooks

Ingredients
  

  • 1 block 14 oz extra-firm tofu, pressed and cubed
  • 2 tbsp coconut yogurt or plain vegan yogurt
  • 1 tbsp lemon juice
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • 1/2 tsp turmeric powder
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 2 tbsp coconut oil or vegetable oil
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 cup coconut milk or cashew cream
  • 1/2 cup vegetable broth or water
  • 1 tbsp tomato paste
  • 1/2 cup diced tomatoes canned or fresh
  • Fresh cilantro for garnish

Method
 

  1. Begin by pressing the tofu to remove excess moisture. Wrap the tofu block in a clean kitchen towel and place a heavy object on top for about 15-20 minutes.
  2. While the tofu is pressing, combine the coconut yogurt, lemon juice, garam masala, ground cumin, turmeric powder, chili powder, and salt in a bowl. Mix well to create a marinade.
  3. Once the tofu is pressed, cut it into cubes and add it to the marinade. Gently toss to coat the tofu evenly and let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator for deeper flavor.
  4. In a large skillet or pot, heat the coconut oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1-2 minutes until fragrant.
  5. Add the marinated tofu to the skillet and cook for 5-7 minutes, turning occasionally until the tofu is golden brown on all sides.
  6. Stir in the ground coriander, paprika, and cook for another minute to toast the spices.
  7. Add the coconut milk, vegetable broth, tomato paste, and diced tomatoes to the skillet. Stir well to combine all ingredients and bring the mixture to a simmer.
  8. Reduce the heat to low and let the sauce simmer for about 15-20 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  9. Taste and adjust seasoning, adding more salt or spices as needed.
  10. Serve the Vegan Tikka Masala hot, garnished with fresh cilantro. Pair it with basmati rice or naan for a complete meal.
