Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup vegan butter softened
  • 3/4 cup granulated sugar
  • 2 tbsp unsweetened almond milk or other plant-based milk
  • 1 1/2 tsp vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.
  3. In another bowl, cream the softened vegan butter and granulated sugar together using an electric mixer until the mixture is light and fluffy, about 3-5 minutes.
  4. Add the almond milk and vanilla extract to the butter-sugar mixture, mixing until fully incorporated.
  5. Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. Be careful not to overmix.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving enough space between each scoop to allow for spreading.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers should remain soft.
  8. Remove from the oven and let the wafers cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
