Method
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine pumpkin puree, brown sugar, cinnamon, nutmeg, ginger, and salt. Mix until smooth.
- Spoon the pumpkin mixture into each taco shell.
- Place the filled taco shells on a baking tray and bake for 10-15 minutes.
- Remove from the oven and let cool slightly before serving.
- Top with whipped cream if desired and serve.
