Ingredients
  

  • 4 cod fillets 6 oz each
  • 1 can 14 oz coconut milk
  • 1 lemon juiced and zested
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. In a saucepan, combine coconut milk, garlic, ginger, lemon juice, lemon zest, soy sauce, and honey.
  3. Simmer the sauce on low heat for 5-7 minutes until slightly thickened.
  4. Season the cod fillets with salt and pepper.
  5. Place the seasoned cod fillets in a baking dish and pour the coconut lemon sauce over them.
  6. Bake for 15-20 minutes or until the cod flakes easily with a fork.
  7. Remove from the oven and let it rest for 5 minutes before serving.
  8. Garnish with fresh cilantro or parsley before serving.
