Preheat the oven to 400°F (200°C).
In a saucepan, combine coconut milk, garlic, ginger, lemon juice, lemon zest, soy sauce, and honey.
Simmer the sauce on low heat for 5-7 minutes until slightly thickened.
Season the cod fillets with salt and pepper.
Place the seasoned cod fillets in a baking dish and pour the coconut lemon sauce over them.
Bake for 15-20 minutes or until the cod flakes easily with a fork.
Remove from the oven and let it rest for 5 minutes before serving.
Garnish with fresh cilantro or parsley before serving.
