Ingredients
  

  • 2 cups fresh or frozen cherries pitted
  • 1 cup heavy cream
  • 8 ounces cream cheese softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup crushed graham crackers
  • 4 tablespoons unsalted butter melted
  • 1 tablespoon lemon juice

Method
 

  1. Prepare the cherry filling by combining cherries, sugar, and lemon juice in a saucepan.
  2. Simmer the cherry mixture over medium heat until slightly thickened, about 5–7 minutes.
  3. Remove from heat and let cool completely, then prepare the crust.
  4. Mix crushed graham crackers with melted butter and press into the bottom of a serving dish.
  5. In a mixing bowl, whip the heavy cream until stiff peaks form, then set aside.
  6. In another bowl, beat the softened cream cheese, powdered sugar, and vanilla until smooth and creamy.
  7. Gently fold the whipped cream into the cream cheese mixture until just combined.
  8. Layer the cream cheese mixture over the graham cracker crust followed by the cooled cherry mixture on top.
  9. Refrigerate for at least 4 hours or overnight to set the dessert.
  10. Slice into squares and serve chilled, optionally garnished with fresh cherries or mint leaves.
