Ingredients
  

  • 1 cup unsalted butter softened
  • 1/2 cup powdered sugar
  • 1 tbsp lemon zest
  • 2 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1/4 tsp salt
  • 1 cup powdered sugar for coating

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter and 1/2 cup powdered sugar until light and fluffy.
  3. Add the lemon zest, fresh lemon juice, and vanilla extract to the butter mixture, mixing until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
  6. Scoop tablespoon-sized portions of dough and roll them into balls. Place the balls on the prepared baking sheet, spaced about 2 inches apart.
  7. Bake in the preheated oven for 12 to 15 minutes, or until the edges are lightly golden. The centers should remain soft.
  8. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  9. Once cooled, roll the cookies in the additional 1 cup of powdered sugar until they are fully coated.
