Prepare the ingredients by draining the pineapple juice.
In a large mixing bowl, combine the crushed pineapple, graham cracker crumbs, shredded coconut, chopped nuts, powdered sugar, and vanilla extract.
Chill the mixture in the refrigerator for about 30 minutes.
Once chilled, scoop out portions of the mixture and roll them into balls.
If using, melt the chocolate chips in a microwave-safe bowl and dip half of each ball into the chocolate.
Return the dipped balls to the refrigerator to allow the chocolate to set.
Serve chilled or at room temperature, garnished with additional coconut or chocolate shavings if desired.
