Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter melted
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 1/4 cup cornmeal
  • 3/4 cup honey
  • 1/2 cup heavy cream
  • 2 tbsp white vinegar or lemon juice
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt for topping

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix the flour, granulated sugar, and salt together. Pour in the melted butter and stir until the mixture resembles coarse crumbs.
  3. Add the cornmeal to the flour mixture and combine until evenly distributed.
  4. Press the mixture into a 9-inch pie dish, ensuring an even layer along the bottom and up the sides. Prick the crust with a fork to prevent bubbling.
  5. Bake the crust for about 15 minutes or until lightly golden. Remove from the oven and set aside to cool slightly.
  6. In a separate bowl, whisk together the honey, heavy cream, white vinegar (or lemon juice), and vanilla extract until fully combined.
  7. Pour the honey mixture into the cooled pie crust, spreading it evenly.
  8. Return the pie to the oven and bake for an additional 30-35 minutes, or until the filling is set but still slightly jiggly in the center.
  9. Remove the pie from the oven and let it cool completely. Sprinkle the sea salt over the top before serving.
