Ingredients
  

  • 4 lbs whole chicken
  • 2 lemons
  • 2 tablespoons paprika
  • 4 cloves garlic
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs rosemary or thyme

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the chicken by patting it dry with paper towels.
  3. Season the chicken inside and out with salt and pepper.
  4. Combine lemon juice, zest, paprika, minced garlic, and olive oil in a bowl.
  5. Rub the marinade all over the chicken, including under the skin.
  6. Place fresh herbs inside the cavity of the chicken.
  7. Truss the chicken legs with kitchen twine for even cooking.
  8. Roast the chicken in the preheated oven for approximately 1.5 hours.
  9. Baste the chicken halfway through the cooking time for added moisture.
  10. Remove the chicken from the oven and let it rest for 15 minutes before serving.
