Ingredients
  

  • 1 12-14 lb whole turkey
  • 1 cup sofrito
  • 3 tbsp adobo seasoning
  • 1/2 cup orange juice
  • 1/4 cup olive oil
  • 2 cups chicken broth
  • 1 cup diced pineapple
  • 2-3 bay leaves
  • 1 tsp black pepper
  • Salt to taste

Method
 

  1. Preheat your oven to 325°F (163°C).
  2. Prepare the turkey by rinsing it and patting it dry with paper towels.
  3. Rub the turkey inside and out with adobo seasoning and salt.
  4. In a large bowl, combine the sofrito, orange juice, olive oil, and pineapple.
  5. Pour the marinade over the turkey, ensuring it's well coated.
  6. Place the turkey in a roasting pan and tuck in the bay leaves.
  7. Spoon some chicken broth into the roasting pan.
  8. Cover the turkey loosely with foil and roast for about 3-4 hours, basting every hour.
  9. Remove foil in the last hour of cooking to brown the skin.
  10. Check the turkey with a meat thermometer; it should reach an internal temperature of 165°F (74°C).
  11. Let the turkey rest for at least 30 minutes before carving.
  12. Serve with your favorite sides and enjoy!
