Preheat your oven to 325°F (163°C).
Prepare the turkey by rinsing it and patting it dry with paper towels.
Rub the turkey inside and out with adobo seasoning and salt.
In a large bowl, combine the sofrito, orange juice, olive oil, and pineapple.
Pour the marinade over the turkey, ensuring it's well coated.
Place the turkey in a roasting pan and tuck in the bay leaves.
Spoon some chicken broth into the roasting pan.
Cover the turkey loosely with foil and roast for about 3-4 hours, basting every hour.
Remove foil in the last hour of cooking to brown the skin.
Check the turkey with a meat thermometer; it should reach an internal temperature of 165°F (74°C).
Let the turkey rest for at least 30 minutes before carving.
