Ingredients
  

  • 8 ounces pasta like fusilli or penne
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1 bell pepper red or yellow, diced
  • 1/2 red onion finely chopped
  • 1/2 cup Kalamata olives pitted and halved
  • 1 cup feta cheese crumbled
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Method
 

  1. Cook the pasta according to package instructions until al dente.
  2. Drain the pasta and rinse it under cold water.
  3. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, olives, and feta cheese.
  4. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  5. Pour the dressing over the pasta mixture and toss gently to combine.
  6. Taste and adjust seasoning if necessary before serving.
  7. Serve chilled or at room temperature, optionally with grilled pita on the side.
