Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the sliced apples, maple syrup, ginger, and cinnamon. Toss to coat the apples evenly.
Transfer the apple mixture into a greased 9x13 inch baking dish.
In another bowl, stir together the oats, flour, brown sugar, and salt.
Add cubed cold butter to the oat mixture and use a pastry cutter or your fingers to work it in until crumbly.
Sprinkle the crumble mixture evenly over the apple filling.
Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the apples are bubbly.
Allow to cool slightly before serving. Enjoy warm, optionally with a scoop of ice cream.
