Ingredients
  

  • 4 boneless skinless chicken breasts (about 1.5 pounds)
  • 1/2 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon honey
  • Fresh basil leaves for garnish optional

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, whisk together the balsamic vinegar, olive oil, minced garlic, dried Italian seasoning, salt, black pepper, and honey until well combined.
  3. Place the chicken breasts in a large, resealable plastic bag or a shallow dish. Pour the balsamic marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish, and marinate in the refrigerator for at least 30 minutes, preferably 2 hours.
  4. Remove the chicken from the marinade and place it in a baking dish. Reserve the marinade for later use.
  5. Bake the chicken in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
  6. While the chicken is baking, pour the reserved marinade into a small saucepan. Bring it to a boil over medium-high heat, then reduce the heat and let it simmer for 5-10 minutes, or until it thickens slightly.
  7. Once the chicken is cooked, remove it from the oven and let it rest for 5 minutes before slicing.
  8. Drizzle the thickened balsamic sauce over the sliced chicken and garnish with fresh basil leaves, if desired. Serve immediately.
