Ingredients
  

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 egg
  • Salt and black pepper to taste
  • 1 cup Greek yogurt
  • 1/2 cucumber grated
  • 1 clove garlic minced
  • 1 tablespoon lemon juice
  • Salt to taste

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine ground chicken, breadcrumbs, Parmesan, parsley, garlic powder, oregano, egg, salt, and pepper.
  3. Shape the mixture into meatballs, about 1.5 inches in diameter.
  4. Place the meatballs on a baking sheet lined with parchment paper.
  5. Bake the meatballs for 20-25 minutes, or until golden brown.
  6. While the meatballs are baking, prepare the tzatziki sauce.
  7. In a bowl, mix the yogurt, grated cucumber, minced garlic, lemon juice, and salt.
  8. Serve the meatballs warm with tzatziki sauce on the side.
