Start by setting your Instant Pot to the sauté function. Add the olive oil and let it heat up for about 1 minute.
Add the minced garlic and sauté for 30 seconds until fragrant, being careful not to burn it.
Season both sides of the chicken breasts with salt, black pepper, Italian seasoning, and paprika.
Place the seasoned chicken breasts in the Instant Pot, and sear them for about 2-3 minutes on each side until golden brown.
Pour in the chicken broth and add the lemon juice. Use a wooden spoon to scrape up any browned bits from the bottom of the pot.
Seal the Instant Pot lid and set it to cook on high pressure for 10 minutes.
Once the cooking time is up, allow for a natural pressure release for 5 minutes, then do a quick release for any remaining pressure.
Carefully remove the chicken breasts and set them on a plate. If using, stir in the butter into the sauce left in the pot until melted and smooth.
Slice the chicken and drizzle the sauce over it before serving.
