Ingredients
  

  • 12 oz flat rice noodles
  • 2 tablespoons vegetable oil
  • 1 cup bell peppers sliced
  • 1 cup green beans trimmed and chopped
  • 3 cloves garlic minced
  • 1 tablespoon Thai chili paste Nam Prik Pao
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1/2 cup fresh basil leaves
  • 1 cup protein chicken, shrimp, or tofu

Method
 

  1. Soak the rice noodles in warm water for about 30 minutes.
  2. Heat vegetable oil in a large wok or pan over medium-high heat.
  3. Add minced garlic and sauté until fragrant, about 30 seconds.
  4. Incorporate your choice of protein and cook until just browned.
  5. Add the sliced bell peppers and green beans, and stir-fry for 2-3 minutes.
  6. Stir in the Thai chili paste, soy sauce, oyster sauce, and fish sauce, melding the ingredients together.
  7. Add the soaked noodles to the wok and toss everything together.
  8. Drizzle lime juice and fold in fresh basil leaves.
  9. Serve hot, garnished with additional basil if desired.
