In a large mixing bowl, combine the drained lentils, breadcrumbs, ground flaxseed, water, tomato paste, soy sauce, Italian seasoning, smoked paprika, salt, black pepper, and nutritional yeast, if using.
Add the sautéed garlic to the mixture and stir everything together until well combined. You should have a slightly sticky mixture that holds together.
Using your hands, form the mixture into small balls, about 1 to 1.5 inches in diameter, and place them on the prepared baking sheet.
Bake the meatballs in the preheated oven for 25-30 minutes, turning them halfway through to ensure even browning. They should be golden and firm to the touch.
Remove from the oven and let them cool for a few minutes before serving. Enjoy with your favorite sauce or as a protein-packed snack!
