Garlic Parmesan Chicken Skewers for Easy Grilling

Ingredients
  

  • 500 g chicken breast cubed
  • ¼ cup olive oil
  • 4 cloves garlic minced
  • ½ cup parmesan cheese grated
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • ½ tsp black pepper
  • 1 tsp salt
  • 2 tbsp olive oil for brushing
  • ¼ cup fresh parsley chopped
  • 2 tbsp parmesan cheese grated for garnish
  • ½ cup tzatziki or garlic sauce for serving

Method
 

  1. In a large bowl, combine the olive oil, minced garlic, grated Parmesan, lemon juice, dried oregano, smoked paprika, black pepper, and salt. Whisk until well combined.
  2. Add the cubed chicken breast to the marinade, ensuring each piece is thoroughly coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.
  3. Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.
  5. Brush the grill grates with a bit of olive oil to prevent sticking. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is golden brown and cooked through. The internal temperature should reach 75°C (165°F).
  6. Remove the skewers from the grill and let them rest for a few minutes. Sprinkle with chopped parsley and additional grated Parmesan before serving.
  7. Serve the chicken skewers with tzatziki or garlic sauce for dipping, and enjoy the burst of flavors.
