- Wash and halve the baby potatoes.

- Add the halved potatoes to the bowl and toss to coat them evenly.
- Spread the coated potatoes in a single layer on a baking sheet.
- Roast the potatoes for about 30-35 minutes, flipping once halfway.
- Check for doneness by piercing with a fork; they should be tender.
- Remove the potatoes from the oven, garnish with extra rosemary, and serve.
