Ingredients
  

  • 2 pounds baby potatoes
  • 4 cloves garlic minced
  • 3 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh rosemary chopped

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Wash and halve the baby potatoes.
  3. In a large bowl, mix garlic, olive oil, salt, pepper, and rosemary.
  4. Add the halved potatoes to the bowl and toss to coat them evenly.
  5. Spread the coated potatoes in a single layer on a baking sheet.
  6. Roast the potatoes for about 30-35 minutes, flipping once halfway.
  7. Check for doneness by piercing with a fork; they should be tender.
  8. Remove the potatoes from the oven, garnish with extra rosemary, and serve.
