Ingredients
  

  • 2 cups all-purpose flour
  • 1 packet 2 1/4 tsp instant yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 3/4 cup warm water
  • 3 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1/4 teaspoon flaky sea salt for topping
  • 2 tablespoons olive oil for greasing and drizzling

Method
 

  1. Preheat your oven to 400°F (200°C). Grease a 12-cup muffin tin with olive oil.
  2. In a large mixing bowl, combine the flour, instant yeast, sugar, and salt. Mix well until combined.
  3. Add the warm water to the dry ingredients and stir until a sticky dough forms.
  4. Incorporate the minced garlic and chopped rosemary into the dough, mixing until evenly distributed.
  5. Cover the bowl with a clean kitchen towel and let it rise in a warm place for about 30 minutes, or until doubled in size.
  6. Once the dough has risen, punch it down gently to release any air bubbles. Divide the dough into 12 equal portions.
  7. Place each portion into the prepared muffin tin, filling each cup about halfway.
  8. Drizzle a little olive oil over the top of each muffin and sprinkle with flaky sea salt.
  9. Bake in the preheated oven for 15-20 minutes, or until the muffins are golden brown and sound hollow when tapped.
  10. Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring to a wire rack.
