  • 4 boneless skinless chicken breasts (about 1.5 pounds)
  • 1 cup whole wheat breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce low-sodium, no sugar added
  • 1 cup part-skim mozzarella cheese shredded
  • 2 tablespoons olive oil

Method
 

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.
  2. In a shallow bowl, combine the whole wheat breadcrumbs, grated Parmesan cheese, Italian seasoning, garlic powder, salt, and black pepper.
  3. Drizzle the olive oil over the chicken breasts, ensuring they are well coated.
  4. Dredge each chicken breast in the breadcrumb mixture, pressing gently to adhere the crumbs evenly to the chicken.
  5. Place the coated chicken breasts on the prepared baking sheet, ensuring they are spaced apart.
