- Preheat your oven to 425°F (220°C).
- In a mixing bowl, combine cauliflower florets with olive oil, garlic powder, salt, and pepper.
- Spread the cauliflower in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through.
- While the cauliflower is roasting, prepare the yogurt dip by mixing Greek yogurt, lemon juice, dill, salt, and pepper in a bowl.
- Serve the roasted cauliflower hot with the dip and garnish with extra dill if desired.
