Ingredients
  

  • 1 large cauliflower cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt & pepper to taste
  • 1/2 cup low-fat Greek yogurt
  • 2 tablespoons fresh dill chopped
  • 1 tablespoon lemon juice
  • 1 cup cherry tomatoes halved

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine cauliflower florets with olive oil, garlic powder, salt, and pepper.
  3. Spread the cauliflower in a single layer on a baking sheet.
  4. Roast in the preheated oven for 25-30 minutes, stirring halfway through.
  5. While the cauliflower is roasting, prepare the yogurt dip by mixing Greek yogurt, lemon juice, dill, salt, and pepper in a bowl.
  6. Serve the roasted cauliflower hot with the dip and garnish with extra dill if desired.
