Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 8 cups vegetable broth
  • 1 cup orzo pasta
  • 1 zucchini diced
  • 1 can 14.5 oz diced tomatoes
  • 1 cup spinach or kale
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onions, carrots, and celery. Sauté until tender.
  3. Stir in minced garlic, cooking until fragrant.
  4. Pour in the vegetable broth and bring to a boil.
  5. Add the orzo pasta and cook according to package instructions.
  6. Stir in zucchini and diced tomatoes.
  7. Add spinach or kale, thyme, salt, and pepper, and simmer for about 5 minutes.
  8. Taste and adjust seasoning if necessary.
  9. Serve hot, garnished with fresh herbs if desired.
