Ingredients
  

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter melted
  • 3 ripe bananas mashed
  • 16 oz cream cheese softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1/2 cup heavy cream

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Mix graham cracker crumbs with melted butter.
  3. Press the mixture into the bottom of a springform pan and bake.
  4. In a large bowl, beat the cream cheese until smooth.
  5. Add sugar, bananas, vanilla, lemon juice, and mix thoroughly.
  6. Add eggs one at a time, mixing well after each addition.
  7. Fold in the heavy cream until just combined.
  8. Pour the filling over the baked crust and smooth the top.
  9. Bake for 55-60 minutes until set but still slightly jiggly in the center.
  10. Remove from the oven and let it cool to room temperature.
  11. Chill in the refrigerator for at least 4 hours before serving.
