In a medium saucepan, heat the heavy cream over medium heat until it starts to simmer. Do not let it boil.
Remove the saucepan from heat and add the dark chocolate chips. Stir gently until the chocolate is completely melted and the mixture is smooth.
Allow the chocolate mixture to cool slightly at room temperature for about 10 minutes.
Once cooled, pour the chocolate mixture into a mixing bowl. Using an electric mixer, whip the mixture on medium-high speed until it forms soft peaks. This will take about 2-3 minutes.
Be careful not to over-whip, as the mousse should have a light and airy texture. It should hold its shape but still be soft and creamy.
Spoon the mousse into serving dishes and refrigerate for at least 1 hour before serving to allow it to set.
Before serving, you may add your favorite toppings such as whipped cream, chocolate shavings, or fresh fruit.
