Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 medium apple diced
  • 6 ounces brie cheese cut into small pieces
  • 1 tablespoon fresh thyme chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the diced apple, brie cheese, and fresh thyme.
  3. Using a sharp knife, cut a pocket into each chicken breast.
  4. Stuff each chicken breast with the apple and brie mixture.
  5. Season each stuffed chicken breast with salt and pepper.
  6. Heat olive oil in a large oven-safe skillet over medium-high heat.
  7. Sear the chicken for 4-5 minutes on each side until golden brown.
  8. Pour the chicken broth into the skillet and transfer it to the oven.
  9. Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  10. Let the chicken rest for 5-10 minutes before serving.
