  • 1 cup cake flour
  • 3/4 cup granulated sugar
  • 6 large egg whites
  • 1/4 teaspoon cream of tartar
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • Oil for frying
  • 1/4 cup cinnamon-sugar for coating

Method
 

  1. Preheat your oil in a deep pot to 375°F (190°C).
  2. Whip egg whites with cream of tartar until soft peaks form.
  3. Gradually add sugar while continuing to whip until stiff peaks form.
  4. Sift together cake flour and salt, then gently fold into the egg mixture.
  5. Pipe small rounds of dough into the hot oil.
