Ingredients
  

  • 1 cup rice noodles
  • 14 oz firm tofu cubed
  • 2 tablespoons gochujang
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • 1/2 cup chopped vegetables carrots, bell peppers, or snap peas
  • Fresh cilantro for garnish

Method
 

  1. Prepare the noodles according to package instructions.
  2. In a mixing bowl, combine tofu, gochujang, soy sauce, lime juice, and sesame oil.
  3. Heat a large skillet over medium-high heat and add the tofu mixture.
  4. Add chopped vegetables to the skillet and stir-fry for 3-5 minutes.
  5. Combine the cooked noodles with the tofu and vegetables in the skillet.
  6. Serve in jars, topped with fresh cilantro.
