Preheat your oven to 400°F (200°C).
In a small bowl, combine olive oil, smoked paprika, garlic powder, salt, and black pepper.
Pat the chicken thighs dry to ensure the skin gets crispy. Then, place them in a baking dish.
Rub the spice mixture all over the chicken, making sure to get it under the skin.
Drizzle lemon juice over the thighs and sprinkle the zest on top.
Roast in the preheated oven for 35-40 minutes, or until the internal temperature reaches 165°F (75°C).
Remove from oven and let it rest for 5-10 minutes before serving.
Garnish with fresh parsley before serving.
