Ingredients
  

  • 4 medium-sized apples cored and diced
  • 4 medium carrots peeled and sliced
  • 1/4 cup Dijon mustard
  • 1/4 cup pure maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh rosemary chopped (optional)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the diced apples and sliced carrots.
  3. In a separate bowl, whisk together Dijon mustard, maple syrup, olive oil, salt, and pepper.
  4. Pour the dressing over the apples and carrots, mixing until well-coated.
