Ingredients
  

  • 1 lb carrots peeled and cut into sticks
  • 2 medium apples cored and sliced
  • 2 tbsp olive oil
  • 2 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 tbsp fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the olive oil, maple syrup, Dijon mustard, apple cider vinegar, salt, black pepper, and dried thyme. Whisk until the mixture is well blended.
  3. Add the carrot sticks and apple slices to the bowl, tossing them in the dressing until they are evenly coated.
  4. Spread the carrots and apples out in a single layer on a large baking sheet. Ensure there’s space between the pieces for even roasting.
  5. Roast in the preheated oven for about 25-30 minutes, or until the carrots are tender and beginning to caramelize. Stir halfway through cooking to ensure even browning.
  6. Once done, remove the baking sheet from the oven and let it sit for a couple of minutes.
  7. Transfer the roasted carrots and apples to a serving dish and garnish with fresh parsley before serving.
