Ingredients
  

  • 2 lbs carrots peeled and cut into sticks
  • 2 medium apples cored and sliced
  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme or rosemary for garnish optional

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the carrots and apples.
  3. Drizzle with olive oil, maple syrup, and Dijon mustard.
  4. Season with salt and pepper.
  5. Spread the mixture on a baking sheet.
  6. Roast for 25-30 minutes, stirring halfway through.
