Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup diced apples peeled and cored
  • 1/2 cup caramel sauce store-bought or homemade
  • 1/2 cup chopped pecans or walnuts optional

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry mixture to the wet mixture, mixing until just combined.
  6. Fold in the diced apples, caramel sauce, and nuts (if using).
  7. Using a cookie scoop or tablespoon, drop dough onto ungreased baking sheets, leaving space for spreading.
  8. Bake for 12-15 minutes, or until the edges are lightly browned and the centers look set.
  9. Let cookies cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
