Ingredients
  

  • 2 cups whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup unsweetened applesauce
  • 1/2 cup Greek yogurt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts or seeds optional
  • 1/2 cup dried fruit optional

Method
 

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
  2. In a large mixing bowl, combine the whole wheat flour, baking powder, baking soda, salt, and cinnamon. Stir until well mixed.
  3. In another bowl, whisk together the applesauce, Greek yogurt, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are okay.
  5. If you’re adding nuts or dried fruit, fold them in gently at this stage.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Remove from the oven and let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
