Ingredients
  

  • 8 ounces elbow macaroni
  • 2 cups fresh corn kernels about 3-4 ears
  • 1/2 cup red onion finely diced
  • 1/2 cup crumbled cotija cheese
  • 1/4 cup mayonnaise
  • 2 tablespoons sour cream
  • Juice of 2 limes
  • 2 teaspoons chili powder
  • Salt and pepper to taste
  • Fresh cilantro chopped (optional)

Method
 

  1. Cook the pasta according to package instructions, then drain and rinse with cold water.
  2. Grill or sauté the corn until charred, about 5-7 minutes.
  3. In a large bowl, combine the cooked pasta and charred corn.
  4. Add the red onion, cotija cheese, mayonnaise, sour cream, lime juice, and chili powder to the bowl.
  5. Season with salt and pepper, mixing thoroughly to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
  7. Before serving, garnish with fresh cilantro if desired.
