Quick Macaroni Salad for Simple Weeknight Dinners

Ingredients
  

  • 2 cups elbow macaroni
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 cup diced celery
  • 1/2 cup chopped bell peppers
  • 1/2 cup diced onions
  • Salt and pepper to taste
  • 1/2 cup chopped cooked bacon optional
  • 1 tablespoon apple cider vinegar

Method
 

  1. Cook the macaroni according to the package instructions, then drain and rinse with cold water.
  2. In a large mixing bowl, combine the mayonnaise, Greek yogurt, Dijon mustard, and apple cider vinegar.
  3. Add in the cooled macaroni, celery, bell peppers, onions, and bacon (if using) into the bowl with the dressing.
  4. Season with salt and pepper to taste, then mix well to combine.
  5. Refrigerate the salad for at least 30 minutes before serving.
  6. Before serving, give the salad a good stir and adjust seasoning if necessary.
