Ingredients
  

  • 4 medium zucchinis
  • 1 cup cherry tomatoes halved
  • 1 cup bell peppers diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. Spiralize the zucchinis and prepare the other vegetables.
  2. Place zoodles and chopped vegetables in a large mixing bowl.
  3. In a separate bowl, whisk together the dressing ingredients.
