Ingredients
  

  • 3 very ripe bananas mashed (about 1.5 cups)
  • cup unsweetened applesauce
  • ¼ cup almond milk
  • 1 tsp vanilla extract
  • 2 cups whole wheat flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
  • ½ cup chopped walnuts optional

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan with a little coconut oil or cooking spray.
  2. In a large mixing bowl, mash the ripe bananas until smooth. It's okay if there are a few small lumps; they’ll add to the texture.
  3. Add the unsweetened applesauce, almond milk, and vanilla extract to the mashed bananas. Mix well until all the wet ingredients are thoroughly combined.
  4. In a separate bowl, whisk together the whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix, as this can lead to a denser bread.
  6. If desired, fold in the chopped walnuts for added crunch and flavor.
  7. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  8. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Once baked, remove the banana bread from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.
