Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • 1/4 cup soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons rice vinegar
  • 1 tablespoon hoisin sauce
  • 2 teaspoons sesame oil
  • 1 bell pepper chopped
  • 1 zucchini sliced
  • 1/2 cup unsalted peanuts
  • 4 cloves garlic minced
  • 1 tablespoon ginger minced
  • Red pepper flakes to taste

Method
 

  1. Prepare the chicken and vegetables.
  2. Combine sauces in a bowl.
  3. Add chicken to the crockpot.
  4. Add chopped vegetables and garlic.
  5. Stir in cornstarch and peanuts.
  6. Cook on low for 6-7 hours.
  7. Add remaining peanuts and adjust seasoning.
