Ingredients
  

  • 1 lb large shrimp peeled and deveined
  • 2 tsp blackened seasoning or Cajun seasoning
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 8 oz mushrooms sliced
  • 1 tsp smoked paprika
  • 1/2 cup vegetable or chicken broth
  • 1 cup heavy cream
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 8 oz fettuccine or egg noodles cooked and drained

Method
 

  1. In a medium bowl, toss the shrimp with blackened seasoning until evenly coated. Set aside.
  2. Heat the olive oil in a large skillet over medium-high heat. Once hot, add the shrimp and cook for 2-3 minutes on each side until they are opaque and cooked through. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, melt the butter and add the minced garlic. Sauté for about 30 seconds until fragrant.
  4. Add the sliced mushrooms to the skillet and cook for 4-5 minutes, stirring occasionally, until they are tender and browned.
  5. Stir in the smoked paprika and cook for an additional minute to enhance the flavor.
  6. Pour in the broth and bring the mixture to a simmer. Let it reduce for about 2-3 minutes.
  7. Reduce the heat to medium-low and stir in the heavy cream, Dijon mustard, and lemon juice. Mix well and let it simmer for another 2-3 minutes to thicken slightly.
  8. Return the blackened shrimp to the skillet, stirring to coat them in the sauce. Cook for an additional 2 minutes to heat through.
  9. Add the cooked fettuccine or egg noodles to the skillet, tossing to combine everything thoroughly. Adjust seasoning with salt and pepper as needed.
  10. Serve immediately, garnished with fresh herbs if desired.
