Ingredients
  

  • 4 chicken thighs skin-on
  • 4 chicken drumsticks skin-on
  • 1 cup red wine preferably Burgundy
  • 1 cup chicken stock
  • 2 tablespoons tomato paste
  • 2 cloves garlic minced
  • 1 onion chopped
  • 2 carrots sliced
  • 1 cup mushrooms sliced
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Method
 

  1. Prepare the chicken
  2. Sear the chicken pieces
  3. Remove the chicken and sauté vegetables
  4. Add the tomato paste and deglaze
  5. Incorporate liquid ingredients and herbs
  6. Return the chicken to the pot
  7. Cover and braise
  8. Adjust seasoning and serve
