Preheat your oven to 375°F (190°C).
Prepare the stuffing by combining the diced apple, Brie, and thyme in a bowl.
Slice a pocket into each chicken breast without cutting all the way through.
Stuff each chicken breast with the apple and Brie mixture.
Season the outer side of the chicken breasts with salt and pepper.
In a skillet, heat olive oil over medium heat and add the chicken breasts.
Cook chicken for about 3-4 minutes on each side, until browned.
Transfer the chicken to a baking dish and pour chicken broth around it.
Bake uncovered in the preheated oven for 25-30 minutes or until the chicken is cooked through.
Let the chicken rest for 5 minutes before serving.
