Ingredients
  

  • 1 medium butternut squash peeled, seeded, and cubed (about 4 cups)
  • 3 medium apples peeled, cored, and sliced (such as Granny Smith or Honeycrisp)
  • 2 tbsp olive oil or melted vegan butter
  • 2 tbsp maple syrup
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/4 cup chopped pecans or walnuts optional
  • 1 tbsp fresh rosemary or thyme leaves optional
  • 1 tbsp brown sugar optional, for extra sweetness

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the cubed butternut squash and sliced apples.
  3. Drizzle the olive oil or melted vegan butter over the squash and apples, then add the maple syrup, cinnamon, nutmeg, and salt. Toss everything thoroughly to ensure the squash and apples are evenly coated.
  4. If using, add the chopped nuts and fresh herbs to the mixture and stir gently to combine.
  5. Transfer the mixture to a greased baking dish, spreading it evenly.
  6. Sprinkle the brown sugar over the top if you prefer an extra touch of sweetness.
  7. Cover the dish with aluminum foil and bake for 30 minutes.
  8. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the squash is tender and the top is slightly caramelized.
  9. Once done, let it cool for a few minutes before serving.
