Season the chicken breasts with salt and pepper on both sides.
Heat olive oil and butter in a large skillet over medium-high heat.
Add the chicken breasts to the skillet and sear for 5-7 minutes on each side until golden brown.
Remove chicken from the skillet and set aside on a plate.
Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
Pour in the chicken broth, scraping the bottom of the skillet to release any browned bits.
Reduce the heat to low and stir in the Boursin cheese until melted and smooth.
Return the chicken to the skillet, spooning the sauce over the top, and cook for another 5 minutes.
Garnish with fresh parsley before serving warm.
